Keto Shrimp Alfredo with Tofu Shirataki Noodles

Finally a delicious low carb, keto shrimp alfredo recipe using tofu shirataki noodles! Only 7 net carbs per serving!

Ingredients
  

  • 1 package Tofu Shirataki Fettuccine Shape Noodles
  • 8 ounces Shrimp, raw, peeled, deveined, tails removed
  • 1 cup Mushrooms, sliced
  • 1 tsp Sour Cream
  • 1 tsp Lemon juice
  • ΒΌ tsp Garlic, minced
  • 1 wedge Laughing Cow Creamy Swiss Cheese
  • 2 tsp Parmesan Cheese, grated
  • Salt, to taste
  • Pepper, to taste

Instructions
 

  • Pour noodles into a colander. Rinse and drain well. Then thoroughly pat the noodles dry.
  • Spray a skillet with non-stick spray and heat to medium heat. Then add the shrimp and mushrooms & cook through for approximately 4 minutes.
  • Remove shrimp & mushrooms and set aside.
  • Re-spray the skillet & add the noodles, sour cream, lemon juice, minced garlic, & cheese wedge.
  • Cook and stir well for around 3 minutes, until the cheese is melted and the noodles are evenly coated.
  • Add parmesan cheese, shrimp, and mushrooms. Cook & stir for around 2 more minutes.
  • This recipe serves 1 to 2 people, depending on your appetite!
