4Salmon fillets
4tspOld Bay Seasoning
1tbspOlive Oil
1tbspLemon Juice, freshly squeezed
2tbspMayonnaise
1tbspWhole Grain Mustard
½tspBlack Pepper, Ground
½tspSea Salt
8ouncesJumbo Lump Crab Meat
10Ritz Crackers, crushed
½bunchFresh Parsley, finely chopped
3Spring Onions, thinly sliced
1cloveMinced Garlic
Instructions
Place your oven rack in the center of the oven and then preheat oven to 350° F.
Line a large baking sheet with parchment paper.
Rinse your salmon fillets and dry on both sides with paper towels. Then cut a deep slit down the center of each fillet approximately 1" from each end of the fillet.
Place your fillets onto your baking sheet and rub your mixture of 2 t. Old Bay Seasoning & 1 T. olive oil evenly over all 4 salmon fillets.
Combine lemon juice, 2 t. Old Bay Seasoning, mayo, mustard, black pepper, salt, spring onions and minced garlic. Mix well.
Drain your crab meat and add that to the sauce mixture along with the crushed Ritz cracker crumbs and half of the chopped parsley.
Now, separate the crab mixture into 4 equal parts and stuff each salmon fillet with the crab mixture (approximately 1/2 cup of crab mixture per salmon fillet).
Bake in preheated 350° F oven for around 20 minutes. Be sure the salmon is at a minimum 120° to 130°F with meat thermometer.
Sprinkle the remaining chopped parsley over top of the cooked salmon and serve.
