Crockpot Cabbage Soup Recipe

This Crockpot Cabbage Soup is a super easy to make, inexpensive, healthy, delicious recipe that will bring your family back to the kitchen for seconds.

Ingredients
  

  • 2 tbsp Olive Oil
  • ½ Onion, chopped
  • 4 cloves Garlic, minced
  • 1 to 2 lbs Ground Beef
  • 2 cans Diced Tomatoes, (two 14.5 ounce cans)
  • 6 ounces Tomato Paste
  • 4 cups Beef Stock
  • 1 head Cabbage, cut up into bite-size pieces
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ½ tsp Paprika
  • ½ tsp Italian Seasoning
  • Salt & Pepper, to taste

Instructions
 

  • In a skillet, cook olive oil, chopped onions, and minced garlic until onions are translucent.
  • Then, add ground beef and cook, breaking up into small pieces, until cooked through.
  • Drain grease from ground beef mixture and add to a large crockpot.
  • Add remaining ingredients to crockpot and mix well with a large spoon. Then, set on high for 6 hours. Enjoy!

Tips, Tricks, & Substitutions

  • For the meat lovers, add an additional 1/2 lb to 1 lb of ground beef.
  • OR other meats like kielbasa.
  • Be sure to cut up your cabbage into small bite size pieces. It's easier to eat that way.
  • For the carb lovers, add cooked rice or diced potatoes.
  • Alternatively, you can serve it on top of steamed rice.
  • Other veggies can be added such as: diced carrots, peas, and/or corn.
  • Top with a little bit of shredded cheese or grated parmesan cheese.
