Patty’s Lime Poke Cake

Ingredients

  • - 1 package white cake mix
  • - 2 packages 3 oz each lime gelatin
  • - 1 cup boiling water
  • - 1/2 cup cold water
  • Frosting:
  • - 1 cup cold milk
  • - 1 package 3.4 oz instant vanilla pudding mix
  • - 1 tub 8 oz frozen whipped topping, thawed
  • - green sprinkles

Instructions

  • Prepare & bake cake according to package directions, using a 13" x 9" baking dish.
  • Cool cake on wire rack for 1 hour.
  • In a small bowl, dissolve lime gelatin in boiling water.
  • Stir in cold water and set aside.
  • With a large utility fork, poke holes about 1/2 to 1 inch apart into cooled cake.
  • Slowly pour gelatin over cake.
  • Cover and refrigerate.
  • In a large bowl, whisk milk and pudding mix for 2 minutes until mixture becomes thick.
  • Fold in whipped topping.
  • Spread over cake.
  • Decorate with green sprinkles.
  • Cover and refrigerate until serving.
