3 to 4Medium to Large Skinless, Boneless Chicken Breasts
1cupChicken Broth or Water
1packetTaco Seasoning
115 ounce Can of diced tomatoes
24Taco Shells or Tortillas
1 cupSliced Avocado
1 cupChopped tomatoes
1cupDiced Spring Onions
1cupFat Free Sour Cream
1cupTaco Sauce
2cupsFat Free Shredded Cheese
3cupsShredded Lettuce
Instructions
Add chicken breasts, broth or water, taco seasoning & diced tomatoes to Instant Pot.
Cover and set to Pressure Cook or Manual for 20 minutes (30 minutes if using frozen chicken breasts).
While chicken is cooking, heat your taco shells and/or tortillas and cut up all of your toppings Then place toppings in serving bowls or on a serving platter.
When cooking is done, turn vent knob to the Vent position and de-pressurize until the float valve drops down. Then uncover the Instant Pot and shred the chicken using a large fork.
Place shredded chicken into your taco shells or tortillas and add your toppings.
