If you live in Maryland, you already know we’ll put crab meat and Old Bay on just about anything, and French fries are no exception.
These Maryland crab fries start with crispy fries seasoned with Old Bay, then get piled with sweet lump crab meat and drizzled with a creamy garlic aioli.
They’re easy enough for game day but good enough to serve when friends come over.

What Are Maryland Crab Fries?
Crab fries can mean different things depending on where you order them. Some versions are simply French fries tossed with seafood seasoning, without any actual crab meat.
Think of these as loaded Maryland crab fries: crispy Old Bay-seasoned fries topped with lump crab meat, garlic aioli, fresh herbs and jalapeño.
They’re crispy, creamy, salty and slightly spicy, with plenty of sweet crab meat in every bite.
Crab fries are just one example of how seriously we take crab here in Maryland. If you’re not from here, my guide to Iconic Maryland foods and drinks is a fun place to start.
Crab Fries Recipe Ingredients
- Frozen French Fries
- Old Bay Seasoning
- Mayonnaise
- Dijon Mustard
- Fresh Garlic
- Lemon Juice
- Sea Salt
- Lump Crab Meat
- Fresh Parsley
- Fresh Chives (or Green Onions)
- Jalapeño Pepper

Step-By-Step Instructions
Step 1: Bake the Fries
First, bake the fries according to the package directions. For extra crispy golden brown fries, which work well with the addition of toppings, add a few minutes to the bake time.
Tip: Preheat your baking sheet for crispier fries.
Step 2: Make the Garlic Aioli
Second, in a small bowl, combine mayonnaise, mustard, garlic, lemon juice and salt until it is well combined.
Then, transfer the aioli to a small zip top bag. With scissors, snip off one corner of the bag so you can drizzle the aioli over the fries.

Step 3: Add the Toppings
Third, top fries evenly with lump crab.
After that, drizzle aioli all over the top.
Step 4: Garnish & Serve
Finally, garnish with chopped parsley, chives and diced jalapeño.
Place any extra aioli in a small dish and serve it on the side.

Storing Leftovers
I actually don’t recommend storing leftovers. This dish won’t keep or reheat well once assembled.
This recipe makes enough for 8 servings as an appetizer or side dish, great for a party or crowd.
If enjoying this for dinner, say for a family of four, cut the recipe in half.
Substitutions & Variations
Get creative and experiment with different substitutions and variations to find your perfect crab fries recipe!
- Air fry or deep fry the frozen French fries.
- Make homemade fries using your favorite recipe.
- Try this recipe with waffle fries, crinkle cut fries or sweet potato fries.
- If you don’t have Old Bay seasoning, you can substitute a mixture of salt, pepper, and paprika or use a seasoning salt or other seasoning blend.
- Amp up your crab fries with these add-ons: parmesan cheese, shredded cheddar, crumbled bacon, diced onion.
- Serve with extra dipping sauces like tartar sauce, cocktail sauce, cheese sauce, or guacamole.

What’s the Best Crab Meat for Maryland Crab Fries?
Lump crab meat is my first choice for crab fries. You get those sweet, tender pieces of crab that are substantial enough not to disappear underneath the aioli and toppings.
Jumbo lump is delicious, but I wouldn’t spend the extra money on it for this recipe. Save that splurge for crab cakes where those beautiful big pieces really get to shine.
Backfin or claw meat will also work. Claw is usually less expensive and has a stronger crab flavor, while lump gives you the texture I prefer for these fries.
Whatever you buy, pick through the crab meat gently before using it to remove any stray pieces of shell.
Look for crab meat with a fresh, mild smell. If it smells strongly fishy, I wouldn’t use it.
For an even less expensive option, you can use imitation crab, which is typically made from surimi, a processed white fish such as pollock.

Maryland Crab Fries FAQs
Yes. Cook your frozen fries in the air fryer according to the package directions, then add the Old Bay, crab and toppings after they’re crisp.
I wouldn’t assemble them ahead of time. The aioli and crab will soften the fries. You can make the aioli ahead and refrigerate it, then assemble everything just before serving.
Yes, as long as it’s good-quality lump or backfin crab meat. Drain it well and gently pick through it for shells before adding it to the fries.
