Whoever the genius was who decided to turn stuffed cabbage rolls into soup form, I would like to thank you from the bottom of my heart.

Surprisingly, stuffed cabbage rolls are not that difficult to make.

As a matter of fact, my friends at Home. Made. Interest make an amazing traditional cabbage rolls recipe that’s also keto friendly!

However, this delicious slow cooker cabbage soup recipe is just as good except it takes a fraction the work!

This unstuffed cabbage roll soup is somewhat less labor intensive which is always welcome in my book, especially on busy weeknights!

Then, just throw it all in your crockpot and let it do it’s thing for the day.

The Perfect Low Carb, Keto Soup

So, I purposely did not include rice in this great recipe because I am on a low carb, keto diet.

Basically, I can eat as much of this keto friendly soup as I want and have zero guilt.

Not to mention, this crockpot cabbage soup recipe has hamburger in it, which amps up the protein and the keto friendliness.

As a matter of fact, for a 1 1/4 cup serving, this recipe equals only 6 net carbs!

Without a doubt, this soup is so versatile that if you do need carbs in your life, you can absolutely serve it over top of steamed rice OR you can include the rice in the soup.

In addition, I’ve seen this soup with diced potatoes as well.

Crockpot Cabbage Soup Ingredients

Ingredients

The following simple ingredients are required for this perfect meal:

  • Olive Oil
  • Chopped or Diced Onion
  • 1 pound Ground Beef
  • Fresh Garlic or Minced Garlic
  • Beef Broth, Chicken Broth, Beef Stock, Chicken Stock, Vegetable Stock, or Vegetable Broth (can be low sodium)
  • Tomato Paste
  • Diced Tomatoes (can be fire-roasted tomatoes)
  • Fresh Cabbage – either green cabbage or red cabbage
  • Onion Powder
  • Garlic Powder
  • Paprika
  • Italian Seasoning
  • Salt
  • Black Pepper

How To Make Crockpot Cabbage Soup

Step 1: Cook Olive Oil, Chopped Onion, & Minced Garlic In A Large Skillet

Cook onions until translucent

First, cook chopped onion, minced garlic, and olive oil in a skillet over medium heat until onions are translucent.

Step 2: Add Hamburger/Ground Beef To Skillet

Add ground beef to cooked onions

Second, cook hamburger/ground beef in the heated skillet with the onions and minced garlic.

Break up the ground beef into small pieces and cook completely, until all of the pink color is cooked through and the hamburger is browned.

Then drain the excess grease entirely out of your ground beef mixture.

Step 3: Add All Ingredients To Crockpot

Third, place the drained hamburger mixture, diced tomatoes, tomato paste, spices, and beef broth into a large crockpot.

Then add a whole head of cabbage that has been cut up into bite size pieces.

Step 4: Cook In Your Crockpot on High 

Finally, turn on your crockpot on the high heat setting to have your soup ready in 3-4 hours or on low to have it ready in 6 hours.

Tips, Tricks, & Substitutions

  • For the meat lovers, add an additional 1/2 lb to 1 lb of ground beef or lean ground beef.
  • OR add other meats like kielbasa or ground turkey!
  • Be sure to cut up your cabbage into small bite size pieces. It’s easier to eat that way.
  • Substitute
  • For the carb lovers, add cooked brown, white or long grain rice or diced potatoes and serve with dinner rolls.
  • Alternatively, you can serve your slow cooker soup on top of steamed rice or cauliflower rice.
  • You can make it more of a vegetable soup by adding other veggies such as: diced carrots, peas, corn or even fresh spinach.
  • Beans, such as garbanzo beans, can be a great added ingredient to this soup.
  • For a zestier flavor add 1 tablespoon Worcestershire sauce.
  • If you don’t have 6 ounces tomato paste, you can substitute it with 2 1/4 cups tomato sauce.
  • Top with a little bit of shredded cheese or grated parmesan cheese.

Storage

Store any of your leftover soup in an airtight container (sometimes I’ll just place the entire slow cooker insert in the fridge if I have room) in your refrigerator.

Crockpot cabbage roll soup will last a good 2 to 4 days in the refrigerator.

Can You Freeze Crockpot Cabbage Soup

Yes, you can absolutely freeze cabbage roll soup, which is great for meal prep!

First, allow the soup to cool to room temperature.

Then, place the soup into whatever size portions you want, whether it’s gallon, quart, or pint size freezer bags, or individual, airtight containers.

Lastly, it’s a great idea to label your freezer bags or containers with the name of the soup and the date you placed it in the freezer.

Frozen soup, stored correctly, will last a good 3 to 4 months.

Ingredients
  

  • 2 tbsp Olive Oil
  • ½ Onion, chopped
  • 4 cloves Garlic, minced
  • 1 to 2 lbs Ground Beef
  • 2 cans Diced Tomatoes, (two 14.5 ounce cans)
  • 6 ounces Tomato Paste
  • 4 cups Beef Stock
  • 1 head Cabbage, cut up into bite-size pieces
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ½ tsp Paprika
  • ½ tsp Italian Seasoning
  • Salt & Pepper, to taste

Instructions
 

  • In a skillet, cook olive oil, chopped onions, and minced garlic until onions are translucent.
  • Then, add ground beef and cook, breaking up into small pieces, until cooked through.
  • Drain grease from ground beef mixture and add to a large crockpot.
  • Add remaining ingredients to crockpot and mix well with a large spoon. Then, set on high for 6 hours. Enjoy!
